Raw Mint Thistle Honey

Occasionally nature throws us for a loop and creates some special unique honeys that you would not get in a typical season. Our Mint Thistle Honey is a perfect example of this. We nicknamed our Raw Mint Thistle Honey “the freak of nature honey” due to the Raw Mint Thistle Honey being a product of the drought. We placed our beehives in vast fields of star thistle in hopes to obtain the delicious Raw Star Thistle Honey. Imagine our surprise when we came back to the apiary to harvest the Raw Star Thistle Honey only to find instead Raw Mint Thistle Honey. The Noxious Star Thistle weed creates a lot of nectar for the bees if the rain happens at the right time, but not so much in drought years. Since we never harvest the honey from the beehives until the honey frames are fully capped the bees naturally merged the wild mint and the golden star thistle nectar together creating the Raw Mint Thistle Honey. Star Thistle Honey is very golden in color yet Mint Thistle is the exact opposite being almost black in color. Raw honey never goes bad but naturally goes through a crystallization process based on how much pollen is in the raw honeys, for this reason we aim to “educate not mutilate”. Our honeys are always unpasteurized, unfiltered, unprocessed, unstrained, & unblended, giving you the ability to experience what Pure Mint Thistle Honey tastes like.
